Product Directions: Blue Ribbon Recipe: Brine: In a medium saucepan, combine 2 cups of water and the brine mix* and bring to a boil for 5 minutes. Remove from heat, add 1/2 gallon of cold water, and refrigerate until cool. Reduces weight by up to 8 lbs. Place the pork in the brine bag** and bring to a boil in a pan. Pour the cooled brine mix over the pork. If necessary, add cold water until completely submerged and seal bag tightly. Refrigerate for 2-4 hours. *For meat under 4 lbs, use half the water and half the brine mixture. **Do not use the brine bag on the grill! Season: Remove pork from bag. Rinse thoroughly and pat dry. Brush with oil and evenly spread with Sweet & Smoky Pork Rub. Grill: Grill pork over medium heat until internal temperature reaches 145ºF. Turn and stir to prevent burning. Drizzle with BBQ sauce during the last 2-3 minutes of grilling. Remove pork from grill and let rest for 10 minutes. Shred, serve, and enjoy. Pitmaster Tips and Secrets: Make the brine ahead of time and refrigerate for up to a week. For optimal flavor, brine large pieces for 4 hours, or small pieces for 1-2 hours. For sticky, glazed meat, apply BBQ sauce until the last few minutes of grilling. Turn frequently to ensure the sauce caramelizes without burning. Let the pork sit briefly so the juices can fully penetrate the meat.
